1. Fluffy Baileys Japanese Pancakes
Baileys Crème Pâtissière Ingredients:
- Whole Milk 160 ml
- Whipped Cream 150 ml
- Baileys drink 50 ml
- Vanilla Extract half tsp
- Corn Flour 1 tbsp
- Sugar 10 grams
- Egg Yolk 1
- A pinch of salt
- Milk 65 ml
- Vanilla Extract 2 tsp
- Baking Powder 1 tsp
- Caster Sugar 1 tbsp
- Egg Yolks 2
- Egg Whites 4
- A pinch of salt
- Cake Flour 60 grams
- Lime Juice half tsp
- Cream of Tartar half tsp
To make the Baileys Crème Pâtissière, you must mix all the ingredients except butter and whipped cream in a saucepan. Whisk it well. Place it on a stove and whisk it on medium heat until the mixture thickens nicely. After that, remove the pan and whisk in the butter as well. Pour the mixture into a bowl and cover with cling film. Let the mixture cool down.
After the mixture has cooled down, whisk the whipped cream in a bowl and fold that cream into the Baileys custard. Set aside for a while.
Whisk the egg yolks, vanilla extract, sugar in a bowl. Add the baking powder and flour and mix thoroughly. Add milk and whisk it into the batter before setting it aside.
Mix the egg whites, cream of tartar, lime juice, and salt. With a hand whisk or in a bowl of a stand mixer, whip the egg whites till they reach stiff peaks. Once they get stiff peaks, add the sugar 1 tbsp at a time till you have a thick textured meringue. Fold a third of the meringue into the batter and then add the rest of the meringue and fold to combine everything.
Heat a pan on low heat and grease three crumpet rings with oil. Spoon the batter into these rings until it comes halfway up the side of the ring. Cook the batter for 3-4 minutes till the pancake rises on top of the ring. Once one side is cooked, you can flip them over and cook for another couple of minutes on the other side.
Serve the pancake with the exotic Baileys Crème Patissiere on it. Place another pancake on top of it and repeat till you have three pancakes on top of each other. You can add the crème patisserie over the top and sprinkle it with some chocolate sauce.
2. Baileys crème brûlée
When you are looking for a sinful indulgence for your sweet tooth, the Baileys Irish cream brûlée is not just simple but also quick to make!
What you’ll need:
Six Egg yolks (Preferably large)
Caster Sugar 30 grams
Baileys 300 ml
Whipped Cream 300 ml
Whole Milk 200 ml
Vanilla extract 1 tsp
Here’s what to do:
Mix the whole milk and cream. Add a tsp of vanilla extract and heat it on the stove. Make sure to heat it only till it gets hot and not boiling hot. In the meantime, you can add the sugar to the egg yolk and whisk the mixture till it turns pale and thick. Gradually pour in the Baileys mixture while mixing well. Let it cool down.
Oven Settings: 160C, 140C fan.
Grease six small oven-safe dishes. Fill a roasting tin with boiling water to make it come 2/3rds of the way up the dishes.
Bake for 25 minutes and remove. Let it cool, and then chill it in the refrigerator for 2 hours. You can sprinkle sugar over cremes.
To caramelize it, you have two options.
- Set it under a hot grill for about 1 minute
- Use a blowtorch on it until it turns golden.
